Toss the onion slices with the teaspoon of salt in a basin. Transfer the onions to a colander and let sit for 30 minutes, tossing occasionally. Place the onions on a clean dish towel, collect the corners, and squeeze to remove as much moisture as possible. Since onions contain a lot of water, you should do this over the sink or a wide bowl.

On a rimmed baking sheet, split the onions into four piles. Roll the meat into four slightly loose spheres. To ensure the onions stick to the meat, place the beef balls on top of the mounds and press down firmly with your palm. The patty’s diameter ought to be 4 inches. Add a lot of salt and pepper to the beef.

Combine the butter and oil in a 12-inch skillet and melt it over medium heat. With a broad spatula, flip the patties over so the onion side is down in the pan. To achieve a rich golden brown color and a slight crunch to the edges, cook the onions for 6 to 8 minutes. After 2 minutes, flip the burgers and cook them at high heat until they are nicely browned on the other side.

Melt some cheese and place one or two slices on each burger. Top each burger with mayonnaise, mustard, and pickles, and serve on a bun. Quickly dish it up.
